Dennis jump-started his culinary career at Blackbird, back in 2005, as a line cook and quickly moved up the ranks into a Sous Chef position. He was then offered the amazing opportunity to help open The Publican, another iconic Chicago restaurant, as Sous Chef and headed up the brunch program. After a short hiatus in Florida to spend time with his family, Dennis came back to Chicago and was welcomed back by the One Off Hospitality Group as the opening Chef de Cuisine of Dove’s Luncheonette. He rounded out his nearly 12-year career with One Off Hospitality as the Chef de Cuisine of The Publican. Dennis’s culinary career now has culminated in Fairview, representing the food that he loves to cook, eat and share.
